What the series shows.
Annual averages: 2024: 10.80 $/kg · 2025: 12.48 $/kg. Gaziantep pistachio is the filling in Dubai-style bars, the base of pistachio spread and the topping of baklava, so its price moves straight into the cost of those lines.
This is an export unit value, not a farm-gate or retail price: it mixes in-shell and shelled nuts, grades and destinations, and shelled pistachio sells at roughly twice the in-shell price per kilogram. Read it as a direction and a level, not as a quote.
Harvest is late August to September; new-crop pricing shows from October. Years alternate between heavier and lighter crops, which is the main driver of the swings in the chart.

What is the price of Turkish pistachios per kilogram?
The export unit value in 2025-12 was 12.24 US dollars per kilogram for in-shell and shelled pistachios combined, based on UN Comtrade monthly data. Shelled nuts trade at roughly twice the in-shell price, and farm-gate or retail prices are different.
Why does the pistachio price matter for chocolate buyers?
Pistachio is the main cost in Dubai-style pistachio-kadayif bars, pistachio spreads, pistachio Turkish delight and baklava. A change of one dollar per kilogram in pistachio moves the cost of a filled bar or a jar of spread by several cents per unit.
